Key Responsibilities

  • Review internal therapeutic dietary guidelines and training materials to ensure compliance with the MOH /Hospital’s Medical Nutrition Therapy (MNT) Guidelines.
  • Develop and modify therapeutic menus in accordance to Hospital’s MNT Guidelines, portioning standards and allergen requirement. Key responsibilities include: recipe standardization, texture modification and raw materials assessment.
  • Uphold nutritional compliance and standards through menu reviews and routine supervision of food preparation & distribution ensuring variety, appropriate seasoning, visual appeal, proper temperature and texture modification.
  • Provide Training and nutrition education to food service staffs, including conducting dietetic workshop to external stakeholders. Standardize internal training materials across organization’s Medicare services.
  • Address nutrition related queries and complaints.
  • Conduct nutritional analysis and allergen screening for relevant menus.
  • Guide and mentor junior dietitians.
  • Manage the Control Room Operation – lead & manage a team of 5 Diet Aide to coordinate the collation of meal orders, ensure accurate and on-time printing of meal card for belting.
  • Conduct audits and surveys, and monitoring client satisfaction.
  • Maintain and ensure up-to-date of therapeutic menu matrix in the Electronic Meal Ordering System (EMOS).
  • Ensure health, safety, environment and quality policy and procedures are being followed through, including Halal requirement.
  • Manage and monitor therapeutic meals preparation from kitchens across all settings (on-site / central kitchen) to ensure compliance.
  • Support operation on dietetics related matters and initiatives
  • Leverage on nutrition expertise to introduce and launch new ingredients / menu to enhance food service quality within the institution.
  • Identify gaps for improvement and innovation opportunities to drive the growth and improvement in food service for the organization.
  • Cross collaborate with dietitians across organizations to develop new ideas, concepts, products or solutions to drive food service innovation across Food Solution.
  • Work closely with external stakeholders such as Health Promotion Board (HPB) to advocate for healthier dining initiatives endorsement when necessary.
  • Assist in and/or conduct food service-nutritional related research/survey.

Key Requirements

  • Degree in Dietetics or relevant
  • With at least 3 – 5 years’ of food service experience, working in a large scale operational setting preferred.
  • Candidate with Halal certified Commercial Catering and Manufacturing experience will have an advantage.
  • Strong competency in Medical Nutrition Therapy and capable in applying the science of nutrition in therapeutic menu planning for all ages.
  • An appreciation of the required levels of data accuracy in nutritional & survey analysis. Data Analysis skills will be an advantage.
  • Keep abreast of current research, evidence-based practice and trends in nutrition and dietetics, both clinically and as applied to food services.
  • Ability to work with and foster positive relationship with internal and external stakeholders i.e. hospital’s clinical dietitians & internal cross-functional dietitians to improve food service solution
